No, these muffins are not for bringing on a date, although they'd probably win you some brownie points! The "dates" in this recipe are the dried, sugary fruit that people either love or hate, but give these muffins a try, and the haters may change their minds! Chopped dates are soaked in boiling water, which breaks down the texture and almost turns this mixture into liquid sugar (as dates have an extremely high sugar content), and they provide sort of an earthy, mild sweetness. Add this to a standard muffin batter, with a hint of cinnamon and nice amount of chopped walnuts, and bake until a rich caramel-colored brown. Perfectly sweet, ultra moist, and super easy to make, eat these for breakfast, as a snack, or just because! Fresh out of the oven, these muffins are addictive and I had to stop myself from eating more than one at a time!
Make again? Yes...super easy and tasty, and easily doubled (because you may want more than one batch)!
