Berry Mini Breads

Berry Mini Breads

If you like blueberry muffins (and who doesn't?), you will absolutely LOVE this bread! It's super easy to make, and is simply divine fresh from the oven. The batter isn't overly sweet, but sweetness and fruitiness are added thanks to whole-berry cranberry sauce and plump, juicy blueberries. Butter and buttermilk make the bread extremely moist and tender. The bread is VERY moist however...so moist that I had to almost double the baking time. The edges got done very quickly, while the center batter stayed wet. This worried me, but the end result was a loaf with a crispy, crunchy outside, and warm and soft inside. Surprisingly, the taste of the cranberry sauce is very subtle, but the blueberries more than make up for it.

Make again? Definitely. A nice twist on the typical blueberry muffin.
