Everyday Chocolate Brownies

So rich, so sweet, so fudgy, so chocolatey, and so moist...you'll be overcome with disbelief that these brownies are actually vegan! That's right, there's no trace of fattening eggs or butter in this easy-to-make dessert. The brownies get their richness and moistness thanks to a combination of unsweetened applesauce, chocolate soy milk, and tofu. So naturally, these are low in both fat and calories: only 120 calories and 1 gram of fat each piece. Seriously! Although they do taste "light," the fudginess will be sure to fool you.

To make, simply mix together flour, sugar, cocoa powder, and leavening agents, and then add the liquid ingredients and stir well. Pour into a pan, bake for about an hour, and you've got chocolatey goodness for a crowd. These store well (because there's nothing perishable in them), and are good fresh from the oven, at room temperature, or even refrigerated for a cool fudgy treat. Serve with ice cream and candied nuts, and enjoy a homemade sundae like no other!
