Tomatoes Stuffed with Black Beans and Corn

Were my tomatoes not ripe enough? Did I not use the proper amount of salt and pepper? Was there too much tomato, not enough cheese? Something was not quite right with this recipe. The flavor was good, but it wasn't GREAT...something I think riper, sweeter, juicier tomatoes would have acheived. The mixture of black beans, corn, cilantro, green onions, spices, and shredded cheddar should have been amazing, tangy, and mouthwatering. But this recipe was rather...bland. Even the cheddar, both mixed into the stuffing and melted on top, did not seem to add enough saltiness or contrast to the tang of the tomato. The black beans and corn seemed bland. The cilantro helped some, but still was not enough. And I think even the addition of a little more salt would not have helped. It must have been the tomatoes! The stuffing mixture on its own, however, would make a great cold salad/side dish. A little lime juice squeezed over it might help with the missing flavor too.

Make again? Probably not. Or at least just the stuffing mixture. Bring on the limes!
