Vegetable-Lentil Curry

Vegetable-Lentil Curry

There's just something about these Vegetarian Times Indian curry recipes that doesn't work. Sure, I'm not expecting to make authentic Indian food, but this now totals three recipes like this that just...don't quite get it. I gave the other recipes good reviews, but something just isn't working.

I don't want to mislead anyone: I'm still going to give this recipe a good review. It was easy to make. It was filling and hearty. It had good flavor. I've never had sweet potatoes in a curry dish, and it was something different and good. The lentils added that nice meaty flavor. The tomatoes added some tang. But...there's just something missing for a true delicious Indian dish. And I hate to say it, but I think one thing that hasn't driven me crazy about these curry dishes is the addition of cauliflower. As far as leftovers are concerned, cauliflower really can stink up a pot of what was once good food, literally. After refrigerating the leftovers in a pot, the stench of curried cauliflower hit me as soon as I opened the door. Not good. And not something that makes me want to eat it again.

Make again? Probably not. I guess this is one of those things best eaten the day it's made.
