Vegan Coconut Vegetable Curry

I've had much better and more flavorful curries before, but this was a quick and easy enough dish that made good leftovers. It was also better the next day, as the potatoes allowed the curry to thicken up and turn into a nice stew. I omitted the salt, as the recipe suggested adding enough "to taste." I figured the curry flavor would be enough to hold its own, but a little salt would have been nice, maybe even a little heat. All in all, this dish was chock full of healthy veggies, was very filling, and had a nice sweet and savory flavor.

Make again? Yes. Again, this is great for leftovers.
