Lentil-Walnut Spread

Lentil-Walnut Spread

I'm still not quite sure what to make of this recipe. It is definitely way too hearty to be called a spread; I would almost be more inclined to describe this as a sandwich filling. That being said, I love the taste of lentils. They have sort of an unexplainable meaty, smoky, grilled flavor...almost as if they'd been simmering with a hamhock or neckbones all day. The walnuts added a nice crunch, and the strength of the garlic went really well with the lentils. The arugula, however, I think was a bit much. In fact, I think it's what prevented me from wolfing it down. What also added to the sandwich filling-y feeling was the texture: chunky, thick, and solid. Again, too much for a "spread."

Make again? Maybe, with spinach instead of arugula...and I'd throw it all in a food processor for a smoother texture.
